How to Make the Ideal Protein Approved Christmas Cauliflower Mash
- 1 large head of cauliflower, cut into florets
- 2 cloves garlic, minced
- 1/4 cup Ideal Protein chicken or vegetable broth
- 1/4 cup Ideal Protein vegetable chili mix
- 1/4 cup unsweetened almond milk (or other approved milk substitute)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped chives for garnish (optional)
- Steam the cauliflower florets until they are tender. You can do this by placing them in a steamer basket over boiling water for about 10-15 minutes. Alternatively, you can microwave them with a little water in a covered microwave-safe dish for 5-7 minutes.
- While the cauliflower is cooking, heat the olive oil in a small pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown it.
