Eating Healthy Never Tasted So Good!

These recipes are so delicious you won’t believe they can help you lose weight!

IDEAL PROTEIN BALSAMIC HONEY AND MUSTARD PORK CHOPS

 

These tasty, juicy balsamic pork chops drizzled with a sweet mustard and berry sauce are quick and easy to make.

Serves 2

Original Recipe: Closet Cooking

 

Ingredients

1 lb. pork chops

¼ cup Ideal Protein balsamic dressing

¼ cup calorie-free pancake syrup

¼ cup calorie-free blueberry jam

2 tbsp Dijon mustard

1 tbsp Frank’s Red Hot (or to your taste)

1 tbsp low sodium soy sauce

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp parsley, chopped as garnish

 

Directions

Combine the balsamic vinegar, pancake syrup, blueberry jam, hot sauce, mustard, soy sauce, and garlic to make a marinade. Marinate the pork chops for a minimum of 30 mins. For best results, marinate overnight.

In a large pan, heat the oil over medium-high heat.  Add the pork chops and cook for 3-5 minutes or until they become lightly golden brown on one side. Turn them and pour the remaining marinade over the pork chops. Cook for another 3-5 minutes or until fully cooked. Allow the sauce to boil and thicken.

Option: If the blueberry jam is not your favorite, you can replace it with another calorie-free fruit spread such as strawberry or raspberry or omit entirely.

SEARED SCALLOPS WITH STEAMED BRUSSEL SPROUT LEAVES

 

Are you looking for an elegant and sophisticated entrée to impress your date, in-laws, or friends? Then look no further.

Serves 2

 

Ingredients

8 medium sea scallops (about 1 lb.)

1 lb. brussels sprouts, trimmed

5 tbsp. olive oil

Salt and pepper, to taste

1 tbsp. fresh lemon juice, plus zest of 1 lemon

4 tbsp. unsalted butter

1 (1½”) piece fresh ginger, peeled and grated

1 tbsp. soy sauce

 

Instructions

  1. Insert the tip of a paring knife on the outside of the stem of a Brussel sprout. Twist the sprout around to release its core, discard the cores. Separate the leaves using your fingers, wash, and set aside.
  2. Heat 2 tbsp. oil in a large non-stick skillet over high heat. Season the scallops with salt and pepper to taste. Cook, flipping once, until browned, 4–6 minutes.
  3. In a saucepan, bring 4-qt. of salted water to a boil. Cook leaves for 1 minute; drain and transfer to a bowl. Season with the remaining lemon juice, olive oil, salt, and pepper.
  4. Divide scallops and leaves between plates; keep warm. Melt butter in the skillet over medium-high; add the grated ginger and cook for one minute; add the soy sauce and pepper. Spoon sauce over scallops and garnish with lemon zest.
