Recipe: Lemon Herb Turkey Meatball Orzo Casserole

Ingredients:

 

 For the Turkey Meatballs:

– 1 lb lean ground turkey

– 1/4 cup breadcrumbs (whole wheat or gluten-free)

– 1/4 cup grated Parmesan cheese

– 1 egg

– 2 cloves garlic, minced

– 2 tablespoons fresh parsley, chopped

– 1 tablespoon fresh basil, chopped

– 1 teaspoon dried oregano

– Salt and pepper to taste

 

 For the Casserole:

– 8 oz orzo pasta

– 2 cups low-sodium chicken broth

– 1 lemon (zest and juice)

– 1 cup cherry tomatoes, halved

– 1 cup baby spinach, chopped

– 1/4 cup fresh parsley, chopped

– 2 tablespoons fresh basil, chopped

– 1 teaspoon dried oregano

– Salt and pepper to taste

– 1/4 cup grated Parmesan cheese (for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a casserole dish with cooking spray and set aside.
