How to Make the Delicious Ideal Protein Pumpkin Spice Muffins 



For the Muffins:
  • 2 Ideal Protein Maple Oatmeal packets
  • 1 Ideal Protein Pancake Mix packet
  • 1 tsp Ideal Protein Vanilla Pudding Mix
  • 1/2 cup canned pumpkin (not pumpkin pie filling)
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp pumpkin spice
  • 1/2 tsp baking powder


For the Cream Cheese Frosting:
  • 1 Ideal Protein Vanilla Pudding Mix packet
  • 2 oz reduced-fat cream cheese
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1-2 drops of yellow food coloring (optional)
Ideal Protein Pumpkin Spice Muffins Recipe


  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the Dry Ingredients: In a mixing bowl, combine the Ideal Protein Maple Oatmeal packets, Ideal Protein Pancake Mix packet, Ideal Protein Vanilla Pudding Mix, pumpkin spice, and baking powder.
  3. Prepare the Wet Ingredients: In a separate bowl, mix the canned pumpkin and unsweetened almond milk.
  4. Combine Wet and Dry Ingredients: Combine the wet and dry ingredients, stirring until you have a smooth batter.
  5. Fill the Muffin Cups: Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake: Bake for 15-20 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
  7. Prepare the Cream Cheese Frosting: While the muffins cool, prepare the cream cheese frosting. In a bowl, mix the Ideal Protein Vanilla Pudding Mix with unsweetened almond milk, cream cheese, and vanilla extract until smooth. Add a drop or two of yellow food coloring for a more traditional cream cheese frosting color, if desired.
  8. Frost the Muffins: Once the muffins are completely cool, pipe or spread the cream cheese frosting on top to create adorable “pumpkins.”
  9. Add the Finishing Touches: For added Halloween decoration, you can use a small piece of green bell pepper or a piece of fresh mint as the “stem” for each pumpkin.
